First, a warning: I am not a food photographer, and I am not great with food presentation, so this dish looks very…brown. Whole-grain rice isn’t the prettiest food to photograph.

Second: This dish is awesome. Delicious! If I could, I would eat it until my guts explode.

Remember, this is a whole lot more tasty than it appears in these photos.

Chili Lime Chicken with Whole Grain Rice

Ingredients:
Marinade

  • 2 tbsp sugar
  • 2 tbsp reduced salt soy sauce
  • Juice from 2 limes
  • Zest from 1 lime
  • 1/2 seeded and diced chili (I used a poblano)
  • 2 cloves garlic, crushed
  • 1/2 tsp salt
  • diced mint leaves, to taste

    Rice

  • 1 cup whole grain rice
  • 2 cups of chicken broth
  • 1/2 cup water (if necessary)

    4 chicken breasts, pounded

    To begin with, mix the rice and the chicken broth together, and bring to a boil while covered. Lower to medium heat and stir once. Check periodically, and add water if necessary. The rice took around 50 minutes to cook.
    The marinade can be made pretty quickly, as all it requires is mixing the ingredients until the sugar and salt dissolve.

    Place the chicken on the grill and brush with the marinade, cooking until done.

    The excess marinade is pretty tasty, and can be drizzled over the top of the chicken and rice. Chicken can also easily be cooked over the stove.
